EATING HEALTHY

With the puppies getting us up bright and early every day (thanks a lot for all those 6:30 AM wake up call on Saturdays and Sundays, y’all!) and being outside moving around with them, we thought it was time to step to the plate AGAIN and try to get our diet a little bit more healthy than chicken & cheese sandwiches every night. There is nothing bad about chicken & cheese sandwiches … except the mayonnaise slathered on the bread and the mounds of cheddar cheese melting all over the chicken breast. Other than that – it’s almost like eating salad!

In December, with working full-time and filling orders for the store (not to mention birthdays and that whole Christmas fiasco that insists on coming around every year),  time is limited so we don’t spend a lot of time cooking or planning meals. It’s all about what you can make quickly and eat with one hand while packing inventory, typing labels, and trying not to drip cheese on invoices.

So, anyhow! this past weekend, I planned menus and bought good food. I almost vomited at how healthy our basket was at checkout – we had to throw ice cream on top so the checkout girl wouldn’t start scanning us for pod people. We’re talking everything from the produce aisle. It was really quite scary.

Each meal wound up lasting us two nights so I only made two new dishes, but here are pictures of them so you can see the craziness I concocted. Both recipes came from Rachael Ray’s Get Real Cookbook.

This is Parmesan Crusted Chicken with Sautéed Vegetables – see the yellow squash, asparagus, tomatoes? Little bit of pesto on top of the chicken – yummy!

Then I tried Turkey Meatloaf with Broccoli & Cheese.

In that meatloaf are chunks of zucchini, red bell peppers, onion, garlic and broccoli, people! I’m eating broccoli. Pretty soon, I’m going to start checking us for pod people!

This week I’m planning Meatball & Sausage Pizza Stoup (mixture of stew & soup), Devilish Chicken & Cool Green Beans, and Grilled Citrus Chicken with Salad. We’ll see how it goes – I’m much better at keeping up if I plan and buy everything ahead of time. Fingers crossed:)
